Ingredients
  

Chicken
  • 2 large boneless, skinless chicken breasts about 1 pound total
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs preferably Italian seasoned
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil for frying
  • 1 cup heavy cream for the creamy garlic sauce
  • 4 cloves garlic minced
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

  1. Prepare the chicken by rinsing and patting dry. If thick, slice in half horizontally.
  2. Combine Parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, and black pepper in a shallow bowl.
  3. Coat chicken in flour, dip in beaten eggs, then coat in breadcrumb mixture.
  4. Heat olive oil in a skillet over medium heat. Cook chicken for 3-4 minutes on each side until golden brown. Transfer to a baking sheet and bake for 15-20 minutes until internal temperature reaches 165°F.
  5. In the same skillet, sauté minced garlic for 1 minute. Add heavy cream and simmer for 5 minutes until thickened. Season with salt and pepper.
  6. Serve chicken topped with creamy garlic sauce and garnish with parsley.
